The French say there are two key ingredients to a good chocolate cake: chocolate, and butter, of course.
This cake, without being a butter bomb, is probably one of our favorites.
Ingredients:
200 g of dark chocolate for baking (we used Pakka)
3 egg yolks
3 whole eggs
125 g of brown sugar or coconut sugar
175 g ground almonds
175 g of butter or ghee (vegetable substitute: coconut oil)
150g dates
Preperation:
Preheat the oven to 170 ° C.
Melt the butter and chocolate in a double boiler.
Soak the dates in hot water for 4 minutes and cut them into pieces of about 2 cm.
Mix the eggs, egg yolks and sugar until the mixture thickens and turns white. Add the ground almonds and the chopped dates. Incorporate the chocolate-butter mixture and mix everything together.
Pour everything into a buttered round cake pan and bake for 50 minutes.
Let cool before unmolding.
You can serve it with nuts or with a few berries.
